Brown rice + Zucchini noodles w/ mixed vegetables, & Herbed Cashew Butter – Orange Sauce

  1. 200 g brown rice noodles
  2. 1 zucchini
  3. ½ a broccoli (300 g)
  4. 250 g ring beans
  5. 1 red pepper
  6. 1 small red onion
  7. 1 bunch of fresh mint leaves
  8. 1 bunch of fresh parsley
  9. 2 cloves of garlic
  10. Juice of 1 Orange
  11. 2 heaped tbspns organic cashew butter
  12. 4 tbspns extra virgin olive oil

 

  • Cook the noodles as per the instructions on the packet. (Generally, they are to be soaked in recently boiled water, for around 5-8 minutes, until they are aldente)
  • Meanwhile, chop the broccoli into florets, the beans finely, the pepper into strips, and onion into half-moons.
  • With a julienne peeler, make noodles from the zucchini.
  • Toss these vegetables on the stove, in a tbspn of olive oil, season and keep aside.
  • For the sauce, place the cashew butter, mint leaves, parsley, the remaining 3 tbspn of olive oil, orange juice, and garlic cloves in a food processor and blend till a light sauce is formed.
  • Combine the rice noodles, zucchini noodles, the tossed vegetables, and pour the sauce over, and serve warm.
